How and where do I set the timezone that cron uses? It is very annoying that
cron seems to execute in California, while the rest of the computer is here
in Denmark.

I tried:

0       1       *       *       *       date > /dev/console

An exactly at 10.00 it said:

"Wed Sep 23 01:00:10 PST 1998" on the console.

Hmm.
