Just remount your drive readwrite;

%mount -rw /

usually does the trick. Then you can edit your fstab.
vi is a tricky program to learn, but after...6 years at it, I've gotten
quite good.

A quick search of yahoo yielded a vi tutorial;

In a hurry, you can also edit files with 'cat'
ie;

%cat > /etc/fstab
(enter everything here, make no mistakes)
^D
%

If you have PINE installed, 'pico' works also as an editor.
