Boot single-user with the serial console enabled.
Mount the root filesystem r/w (mount -u /).
Run 'vipw' to remove the data from root's password field.
Run passwd as root to change the passwords to what you want.  You may
need to exit from single-user and actually login to do this--I seem
to remember that passwd looks for utmp data.
