So indeed replacing

	/               nfs     rw,-T

in /etc/fstab with

	/               nfs     rw,-r=1024,-w=1024

made the machine boot. I ran a tcpdump on the server, and the "hang" is
not a local hang on the client machine, but a constant series of retries -
I'll have to dig through the dump in details later.
