I agree that envstat's column mode wasn't useful with many sensors, but
it was sometimes useful with a few explicitly selected sensors.  For example,

    envstat -i60 -s "acpibat0 charge,acpibat1 charge,acpitz0 temperature"

I don't remember any discussion about removing column mode, though I do
remember discussion about making row mode the default.

Even if column mode never comes back, please could you reinstate the
"-r" option; it would just need to be parsed and accepted but do
nothing.
